Fonds consists of a brief account by Crawford entitled "The Story of Canada's First Mammoth Cheese", about the early cheesemaking industry in Oxford County, Ont. Includes a list of prominent early Canadian cheesemakers. Fonds also consists of a photograph of a mammoth cheese made at Ingersoll, Ont, and shipped to England as an exhibit in 1866.
